How Koreans define freshness?

In one of our project dinners, we were brought to a restaurant famous for its sashimi. I thought they serve sashimi similar to those being served in any other sashimi restaurants. But I was surprised when the main course (i.e. the sashimi) arrived at our table.

The sashimi was a live fish with the body already chopped (see the video below). A thought crossed my mind that probably, this is how Koreans define freshness. As in, it is really fresh. 


We were shocked and at the same time amazed by this dish. In fact one of my colleagues joked about what could have been the fish was saying when it opened its mouth. The answer? "HELP!!!!!!"
